  • 90g fresh peas
  • 1 radish
  • 1 x 100g packet Leafy Patch Salad Mix leaves
  • 50ml extra virgin olive oil
  • 180g marinated Persian Feta
  • Cracked pepper to taste

Mixed Leaves, Smashed Pea and Feta Salad

  1. Blanch the peas in boiling salted water. Remove the peas from the boil and refresh in cold water. Drain and lightly smash in a mortar and pestle. Set aside.
  2. Finely slice the radish and place into chilled water.
  3. Place Leafy Patch Salad Mix leaves into a bowl and dress with extra virgin olive oil.
  4. Arrange lettuce leaves, peas and drained radish onto a serving plate. Top with pieces of diced feta and cracked pepper.
