- 3 large ripe tomatoes, halved, seeded and coarsely chopped
- ¹/3 cup loosely packed fresh basil leaves
- 2 tablespoons tomato sauce
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 small garlic cloves, crushed
- 1 teaspoon salt
- 1 x 100g packet Leafy Patch Baby Cos, torn into bite-sized pieces
- 40g feta cheese, crumbled
Cos Lettuce with a Chunky Tomato Vinaigrette
- To make the vinaigrette, place tomato, basil, tomato sauce, oil, vinegar, garlic and salt into a food processor. Pulse with on/off motion until blended but still chunky.
- Add the vinaigrette to the Leafy Patch Baby Cos in a large bowl and gently combine.
- Sprinkle crumbled feta over the mix, divide into 4 bowls and serve at once.
