  • 3 large ripe tomatoes, halved, seeded and coarsely chopped
  • ¹/3 cup loosely packed fresh basil leaves
  • 2 tablespoons tomato sauce
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 small garlic cloves, crushed
  • 1 teaspoon salt
  • 1 x 100g packet Leafy Patch Baby Cos, torn into bite-sized pieces
  • 40g feta cheese, crumbled

Cos Lettuce with a Chunky Tomato Vinaigrette

  1. To make the vinaigrette, place tomato, basil, tomato sauce, oil, vinegar, garlic and salt into a food processor. Pulse with on/off motion until blended but still chunky.
  2. Add the vinaigrette to the Leafy Patch Baby Cos in a large bowl and gently combine.
  3. Sprinkle crumbled feta over the mix, divide into 4 bowls and serve at once.
