  • 400g can chickpeas, drained and rinsed
  • 180g tub soft marinated feta in oil
  • ¼ teaspoon finely grated lemon rind
  • 1 tablespoon lemon juice
  • 1 x 100g Leafy Patch packet Baby Kale
  • salt and black pepper, to taste

Warm Chickpea, Kale and Feta Salad

  1. Place chickpeas in a small saucepan with 2 ½ tablespoons marinated feta oil, lemon rind and juice then season to taste.
  2. Warm gently over medium-low heat.
  3. In a large serving bowl, toss warm chickpeas and kale then sprinkle with feta before serving.
