- 400g can chickpeas, drained and rinsed
- 180g tub soft marinated feta in oil
- ¼ teaspoon finely grated lemon rind
- 1 tablespoon lemon juice
- 1 x 100g Leafy Patch packet Baby Kale
- salt and black pepper, to taste
Warm Chickpea, Kale and Feta Salad
- Place chickpeas in a small saucepan with 2 ½ tablespoons marinated feta oil, lemon rind and juice then season to taste.
- Warm gently over medium-low heat.
- In a large serving bowl, toss warm chickpeas and kale then sprinkle with feta before serving.
